Skinny Strawberry-Pistachio Bark

Attack of the sweet tooth!

I used to eat ice cream everyday, not a joke, I did. At the time I was pregnant and didn't know yet but thats not the point I am trying to make. The point is, I have a major sweet tooth and its hard not to let it get the best of me. When its a million degrees out, it only seems logical to get some ice cream, and I do a lot of the time, but sometimes I fight it and when I do, I always feel way better and just as satisfied.

Today I tried something new and used the plain Greek yogurt I had in my fridge to create my own "skinny bark." My daughter took part in helping me "make" this and she has eaten 4 squares so far today.... so I take it she likes them. Fun part about this snack is you can completely make it your own and switch up the toppings to whatever you so choose. Next I'm going to try dark chocolate chips and raspberries!

Skinny strawberry-pistachio bark

Ingredients

2 cups plain 2% Greek yogurt
 

 
2 TBS honey
 

 
10 strawberries
 

 
20 shelled pistachios

Procedure
 

 
Mix your Greek yogurt and honey. You can use a food processor and save yourself the work or just mix by hand.
 

 
Add strawberries and pistachios. Spread mix into a square cake pan (but really you can use anything) and lay plastic wrap directly on top kind of squishing it down so it's all nice and even. Throw it in the freezer for a few hours and you're done! Cut it into pieces and eat right away because she melts
