I have been pretending it was already fall because I just couldn't wait any longer for pumpkin flavored everything! Plus, fall is too short so I decided to declare it fall a few weeks early. BUT today it is officially fall and officially acceptable to make all the fall foods and drinks!
Today, in celebration, I made a skinny apple crisp for myself. I just bought new ramekins so I am ready to bake all the sweets. I have to be careful once fall/winter starts, because it is easy to fall off track and indulge a bit too much in all the breaded carb and sugar filled treats.
Here is an easy, indulgent, yet healthy sweet fall treat.
Vegan Oatmeal Apple Crisp
Serving size: 1
Ingredients
1 baking apple
2 TBS old fashioned oats
Optional: 1 TBS VitaMedica French vanilla lean meal powder or protein powder
1 tsp coconut oil, melted
1-2 tsp Truvia baking blend
1 tsp ground cinnamon
1/8 tsp sea salt
1 tsp water
Procedure
Preheat oven to 350
Mix your peeled and cored and cut up Apple in a bowl with salt, LeanMeal powder, cinnamon and sugar until covered on all sides then add your water to bowl
Combine melted coconut oil with ground up oats (making oats become more of a flour than oats) and mix together until it becomes a "crumble"
Add Apple mix to ramekin or oven safe bowl
Top with oat crumble
Cook for 20 minutes
Let cool a bit and Enjoy!
Optional: top with brown sugar, maple syrup greek yogurt or coconut milk whip cream
