Clean Chicken Salad
One of my favorite lunch foods of all time is chicken salad sandwiches. I was craving one earlier today but didn't want to undo my workout by eating the traditional calorie loaded mayo smothered sandwich and have to deal with the guilt I would have after. So I decided to make a clean version with what I had at my house. I never spend more than 20 minutes preparing my lunch so this was perfect!
I grabbed chicken breast that I planned on using for dinner (oops) cut them up in two inch strips and threw them in a medium pot with some water, covered, and let it boil. Once I drained the water I shredded it with two forks and prepared my dressing.
One of my essential foods that I always keep in the fridge is plain yogurt. It's a great replacement for mayo, sour cream, and sweet cream cheese depending on how you prepare it. I use plain 2% Greek Fage added some dijon and lemon juice and seasoned it with some black pepper.
I usually do green apples in my chicken salad but I had blueberries so I threw a handful of them in as well as some chopped red bell pepper and celery.
Let me just say, I know Greek yogurt may not hold a candle to mayo but I was pleasantly surprised when I took my first bite and I'd gladly swap out protien packed Greek yogurt for mayo anyday.
I decided to skip the carbs and put it some lettuce and make lettuce wraps but you could also use crackers, or make a pita wrap.

Ingredients: 6 oz Chicken (I used boneless chicken breasts and boiled, then shredded with fork) 1/4 cup blueberries 1/4 cup chopped red bell pepper 2 Tbsp chopped Celery 2 Tbsp plain Greek yogurt 2 tsp lemon juice 2 tsp dijon mustard salt and pepper to taste
Mix wet ingredients together in a separate bowl. Season as you see fit Toss dry ingredients in the dressing and coat thoroughly Chill and enjoy on lettuce wraps, crackers or tortilla wrap
