PB&J Overnight Oats


I made my first batch of sugar free, healthy strawberry jam and have been trying to find creative ways of using it. I am obsessed with overnight oats and am always trying new flavors and figured I'd blow some minds and bring America's favorite sandwich to their oats :) Is your mind blown yet?!

This is a BIG breakfast just for one so unless your planning a huge day, maybe share this with a friend or save half for tomorrow.

Feel free to use store bought sugar free jam or even just crush some strawberries and add honey and call it jam.

PB&J Overnight Oats

Ingredients: 1 1/2 cup oats 1 1/2 cup almond milk 1 TBSP chia seeds

Toppings: 1/3 cup favorite healthy jam (mine was homemade sugar free strawberry) 1/3 cup peanut butter or PB2 if you have it (I used both) 6 strawberries 1/2 cup plain Greek yogurt

Combine ingredients for oats the night before and put them in fridge overnight. In the morning put half of jam on the bottom of clean mason jar and then later half the plain Greek yogurt on top. Pour 3/4 of your oats on top then add your PB2 (super high protein with half the fat). Top with remaining oats and cut up strawberries then add some more peanut butter or PB2 for topping and your out the door!

This is a hearty breakfast so feel free to save half for tomorrow or share with a friend!

Beauty of overnight oats is that you can switch up the recipe; change jam flavors, use different yogurt, nix the yogurt all together and make it vegan! Whatever floats your boat. Anyways, my breakfast awaits!
