The Easiest Vegan Pizza Ever


Pizza night hold the guilt! This is the EASIEST vegan pizza ever.

I haven't fully converted my husband to enjoy healthy foods. He still regularly eats junk and as much as I try, he loves him some greasy chicago pizza. Tonight was a hard night for me to resist that sestpool of grease BUT I did (victory dance). It wasn't too hard given the fact that I feel like crap after everytime I stuff my face with pizza. Not only do I notice the effect it has on my energy level, but my face, and my mood. So even as I watch him bite into his pizza, I still can resist because I know I have a long night ahead of me and I don't want to spend it in food coma.

I AM feeling a bit lazy though, so I thought of something I can make that won't take up an hour of my time and will be as good as pizza.... or I should really say better than pizza, as far as my health is concerned.

This is my vegan version of pizza night but without fake meat or fake cheeses, because, ew to those too. So I suppose technically it isn't pizza but hey, its in a circle shape, it has veggies, the hummus serves as a cheese/sauce kind of combo, and my tummy likes it so much better.

Start to finish: 15 minutes Ingredients: 1 whole wheat pita 2 TBS hummus of choice (I used spinach artichoke) Half of sweet red pepper Half small onion Few slices of zucchini Handful of greens (I used baby kale mix) 1TBS olive oil

Preheat oven to 400 degrees. Cut your veggies into thin slices. Quarter your zucchini. Pour olive oil into frying pan and heat on high. Add onions and red pepper first. Cook for 2 minutes then add zucchini. When zucchini starts to brown a bit add your handful of greens and remove from heat after 30 seconds. Spread hummus onto pita and add your veggies. Cook in preheated oven for 7-10 minutes until edges have browned. Take out and devour!
