Pistachio Key-Lime Overnight Oats


After a crazy week of road tripping across the states with my two kids who are 19 months and 3 years old, I am ready to get back to our routine and enjoy the comfort of our own home! It is so hard to not take on "vacation" mentality with your food choices when you aren't at home, in your kitchen. I kept up the best I could with being active and making smart choices with what I eat but still didn't get to cook all my meals. I had a few days where I had to resort to fast food and now it is time to detox!

I never thought I would say this but I am so excited to go grocery shopping (who am I). I used to look forward to going and getting a new outfit for the night but now I am excited by re-upping my almond milk.

Anyways, I still had some groceries left from before my trip, enough to make myself a hearty breakfast this morning and start my week off right, even though its Tuesday.

Kefir is a great way to clean out your insides and jump start your detox so of course I incorporated some of my key-lime kefir into this mornings breakfast. Kefir can also help fight off unhealthy food cravings by making the body more nourished and balanced. Its tranquilizing effect on the nervous system has been known to help people who suffer from sleep disorders, depression, and ADHD. So long story short, if you don't drink Kefir, you should really start!

Pistachio Key-Lime Overnight Oats

Ingredients

1 1/2 cup oats (old fashioned or minute oatmeal)

1 cup almond milk (unsweetened vanilla)

1/2 cup key lime kefir

1/4 cup plain Greek yogurt (Fage 2%)

2 TBS chia seeds

zest from 1 lime (optional)

6 chopped pistachios (topping)

Procedure

Pour your oats, almond milk, kefir, Greek yogurt, and chia seeds into a mason jar (or any air tight container) the night before (or at least an hour before eating) and shake rigorously to ensure the chia seeds will not stick together and your ingredients and mixed well. In the morning, pour your mix into a bowl and add more almond milk or kefir if you like it a bit more loose/milky. Add in 6 chopped (shelled) pistachios for topping and a lime for garnish if you want to be fancy and enjoy!
