Baking with Baby: Vegan Pumpkin Muffins


Best part about September is that it is officially baking season! Which also leads to the second best part, PUMPKIN everything! I love to bake but obviously have to be careful because a lot of the traditional recipes call for tons of sugar, butter, and flour, which as we all know, aren’t too good for you. So I am trying my hand at converting these traditional and delicious recipes to make them a little cleaner and healthier. This morning, I decided we would get to work on this challenge and make VEGAN pumpkin muffins! I realized I only had a cup and 1/4 left of whole wheat flour which is why I subbed in some oat flour. Oat flour is simply just, ground up oats that turn into a fine powder that you can use to replace traditional white flour. My 3 year old loves to help me bake, she mostly just pours in the spices once I measure them out and helps in the mixing process, but it is great to get her involved and set a good example of eating at home! We could easily run to Dunkin Donuts and buy a pumpkin muffin, and I am sure it would taste great, but we wouldn't have created this memory and we wouldn't be eating clean.

These took a whopping 15 minutes to prep, and 25 minutes to cook! We were out the door and on our morning bike ride in no time! Vegan Pumpkin Muffins

Ingredients 1 1/4 cup whole wheat flour 3/4 cup oat flour 1 cup sugar (I used Truvia baking blend) 1/4 cup brown sugar 1 TBS baking powder 1/2 tsp baking soda 1/4 tsp sea salt 1 tsp cinnamon 1/2 tsp all spice 1/2 tsp nutmeg 1/2 tsp ground ginger 1 1/4 cup pumpkin purée 1/2 cup almond milk 1/3 cup coconut oil 2 tbs molasses Optional: add pumpkin seeds, apples, cranberries or chocolate chips for extra flavor Procedure Preheat oven to 375 Stir together all dry ingredients in large bowl Add pumpkin, almond milk, coconut oil and molasses in separate bowl and whisk on low until blended Add wet mix to dry bowl and stir until combined Spray muffin cups with coconut oil cooking spray and spoon in your batter Cook for 20-25 minutes until toothpick inserted comes out clean and muffins are a golden brown Enjoy!
