Blueberry Steel Cut Oats
Breakfast is clearly my favorite meal of the day! One, I can load up on carbs and not feel guilty, Two, it is so beautiful and full of color. It also starts the tone of your day. For me, good breakfast= good day. I NEVER miss out on breakfast .
Oatmeal is my jam no matter what the season, but it can get monotonous and you have to switch it up. Steel cut oats offer a completely different texture and more of a nutty taste and offer the same heart healthy benefits and soluble fiber that old fashioned oats do.
I often have no plan when starting breakfast, and today was no different, I had blueberries in the freezer and decided on making something blue and got to work. What came out were these dreamy blueberry steel cut oats

Ingredients
3 Cups of water
1 Cup vanilla almond milk
1 cup steel cut oats
Toppings
2 cups frozen blueberries
1/4 cup dried cherries
1/4 cup slivered almonds
1TBS raw honey
2 TBS chia seeds
2 TBS hemp seeds
Procedure
Bring water to boil. Once at a boil add your cup of oats and turn down heat to low. Add 1 cup of vanilla almond milk and stir. Let simmer, uncovered for 25-30 minutes, stirring frequently to avoid sticking. Once at desired texture, stir in toppings.
Remove from heat and transfer to a bowl, add additional toppings to taste.
