Pumpkin Pecan Granola

I LOVE ME SOME GRANOLA. Make it ahead of time and you got yourself the quickest healthy, yummy breakfast or snack. Customize it to your own liking, experiment with toppings or different flavors/spices... the opportunities are endless! (ok calm down Laine, no one gets that excited about granola)



This is a pumpkin and pecan granola and it is SO YUMMY! Store it in a glass mason jar and if you wanna be a little cutie, throw a seasonal fabric in the cap, or tie a ribbon around and you can gift it to a relative or bring it to a friend for some extra points.


INGREDIENTS

3 C ROLLED OATS

3 TBS BROWN SUGAR

1/2 tsp CINNAMON

1/4 tsp SALT

1 tsp VANILLA EXTRACT

1/3 C HONEY OR MAPLE SYRUP

1/4 C PUMPKIN PURÉE

1/4 C COCONUT OIL

1/2 C PECANS


PROCEDURE

Spread a thin layer on a cookie sheet at bake at 325 for 15 minutes

At 15 minutes take out and stir

Place back in the oven and bake until very light golden brown (about 7-10 minutes longer)

Let cool for about 20 minutes
