Peach and Chicken Flatbread Pizza with Balsamic Reduction.
Pizza Night! This is such an easy fix for those of you who want a nice lazy friday night. Pizza Friday's have been going on in my family for over 25 years. Since I can remember, my aunt Michele would make her AMAZING homemade pizzas and have all the family over (and anyone else who wanted to join) for pizza night. Unfortunately my aunt lives in the suburbs, and most of her kids are grown and moved out so Pizza night's at her house, for me, are few and far between. So I have to carry on the tradition with my family and make my own version of pizza night Fridays!
While this "pizza" is not your traditional all american pizza with loads of mozzarella and tomato sauce, it is light, summery and fits the bill.
This is a perfect summer, "stay fit" pizza and the feta cheese, balsamic and peaches are THE most epic combination. It takes only 20 minutes, start to finish, and requires very little work. I had most ingredients in my kitchen already, just went and got the crust and fresh peaches and I was good to go!
Peach and Chicken Flatbread Pizza with Balsamic Reduction
1 store bought thin pizza crust (I used Archer Farms)
Coconut oil cooking spray
2 tsp extra virgin olive oil
1/2 cup part skim, shredded mozzarella cheese
1 cup shredded cooked chicken breast
1 cup arugula
1/3 cup reduced fat feta cheese
1 small unpeeled peach, thinly sliced
1/3 cup balsamic vinegar
Preheat oven to 400
Spray your baking sheet with coconut oil cooking spray. Coat your pizza crust with 2 tsp of olive oil and evenly coat your crust with mozzarella, chicken, feta, arugula, and peach slices. Sprinkle a bit more mozzarella over all your toppings and bake at 400 for 12 minutes.
At the 10 minute mark, take out your balsamic and place 1/3 cup into a saucepan on medium heat. Cook until it is reduced to about 2 TBS. Once reduced, remove from heat and take out pizza. Drizzle your balsamic over pizza, cut and devour.
